Carlos and I are “that couple” call it true love, destiny, meant to be, yea the annoyingly perfect couple. We met in our late 30’s when I was working as a pastry cook in his restaurant. We never spoke during my time there, until I sat down with him to quit my job. We talked for over two hours, and there has not been a day since that we have not spoken to one another. We found that over the years we had crossed paths in three different states, timing was apparently finally right, and we hit the ground running. For ten years Carlos and I lived in a tiny apt in an upscale San Francisco neighborhood to say it was tiny seems generous, and since it is San Francisco not only was it tiny but it was expensive!! Looking back perhaps it prepared us for this “tiny living” lifestyle.
During those SF years we traveled as much as possible. We flew to destinations like NYC, Hawaii, Alaska eating at Michelin star restaurants and staying four star hotels. One birthday we flew to Paris and ate dinner at the top of the Eiffel Tower, our honeymoon was spent traveling Greece, I’m not trying to brag or be annoying…my point? We really had never camped or considered RV life. Yet here we are living in a 16ft Bambi happier than we have ever been!
by Paulo Neruda “I love you without knowing how, or when, or from where. I love you straightforwardly, without complexities or pride; so I love you because I know no other way than this: where I does not exist, nor you, so close that your hand on my chest is my hand, so close that your eyes close as I fall asleep.”

Hi we are executive chef and pastry chef Carlos & Nancy we have decided to leave the corporate chef life in our rear view mirror and begin living a life we are excited about. We bought a tiny airstream named Gypsy, with zero experience in “RV living” we have left the traditional life behind to hit the road. Our hope is to inspire you with our travels and learn right along with with us as we get creative cooking outdoors. We will share our recipes and experience from many years of cooking in fine dining and the corporate world. Plus we will offer virtual cooking classes with us from different locations. Let’s go!!
